Limited Edition Sevruga Caviar

Sevruga is traditionally caviar from the starry sturgeon (Acipenser stellatus), known for small, dark-gray pearls and a bold, briny flavor, historically the most affordable of the three classic caviars (Beluga, Ossetra, Sevruga). LOFT's Limited Edition Sevruga is a Sevruga-style caviar from Siberian sturgeon (Acipenser Baerii), built as a balance between our River Beluga Reserve and Ossetra Reserve.

Sevruga has smaller pearls and a bolder, saltier, more pronounced flavor. Beluga has larger, softer pearls and a milder, creamier taste. Sevruga is also traditionally the more affordable of the two, from a faster-maturing sturgeon that was historically more available.

Yes. It's known for a punchy, briny flavor that's more intense than Ossetra or Beluga, a good pick if you want caviar that makes its presence known rather than something mild and buttery.

Serve chilled, straight from the fridge, on a mother-of-pearl or non-metal spoon so nothing dulls the flavor. It pairs well with blini, crème fraîche, or simply on its own for a few minutes out of the cold before eating.
